The weather lately has me in the mood for good soup. This recipe makes a very good way to chase the chill. Warning: It is very peppery because of the gravy mix. You may want to experiment with another brand, just watch the points.

Potato Soup

Ingredients:

1 bag Ore Ida O'Brien Hashbrowns (16 oz., frozen)
4 cans fat free chicken broth
1 pkg. McCormick Country Gravy Mix

Spray pan with Pam. Saute potatoes 10 minutes, stirring gently.
Add broth and bring to a boil. Prepare gravy mix according to pkg. directions.
Add to potatoes and broth. Simmer 20-30 minutes.

SERVING SIZE: 1 cup soup

POINTS: 2

Note: You can use the regular Ore-Ida Hashbrowns that do not have the peppers and onions. The soup will be just as good!
